Bourbon Barrel Strong Scotch Ale

This dark, hearty ale was brewed during our annual Barrel Brew at our Montgomeryville store on October 29, 2011 and fermented on site for a month in Bourbon barrels. Our version clocks in at 7.5% ABV, and is flavored with heather tips and just a touch of our unique applewood smoked malt to add a subtle complexity to an already incredibly rich malt bill. The following ingredients are for a 5 gallon batch:

All Grain

16 lb. Thomas Fawcett Golden Promise Malt
½ lb. Hugh Baird Crystal Malt 30° L
½ lb. Hugh Baird Crystal Malt 130° L
1/4 lb. Thomas Fawcett Pale Chocolate Malt*.
2 oz. Keystone Applewood Smoked Malt
Grain quantities assume 70% efficiency.

Extract + Grains

9.9 lb. Muntons Light Liquid Malt Extract
½ lb. Hugh Baird Crystal Malt 30° L
½ lb. Hugh Baird Crystal Malt 130° L
1/4 lb. Thomas Fawcett Pale Chocolate Malt*.
2 oz. Keystone Applewood Smoked Malt

Hop & Tip Schedule

1 oz. Northern Brewer Hop Pellets (Bittering) with 60 minutes left in the boil.
2 oz. Heather Tips (Flavoring) with 10 minutes left in the boil.
Hop quantities assume a full wort boil.

½ lb. Hugh Baird Crystal Malt 30° L* Final Gravity 1.026
