Total (or Titratable) Acidity (TA) – TA is a measure of the amount of organic acids in juice and wine. This measurement allows one to make adjustments in the juice’s acid levels, if neces¬sary, prior to initiating alcoholic fermentation. TA is measured in grams per liter (g/L) of juice (or, alternatively, as a percentage) and is generally in the range of 6.0 to 9.0 g/L (0.6% to 0.9%). For our Tier 1 test, we use a Hanna 902 Titrator.
