4.5-7.0% alpha. Grows well in all climates. Susceptible to aphid. Cascade is a mild aroma hop with good soft bittering properties and a pleasant, flowery/spicy aroma that often lends a herbal or perfumelike character to finished beer, sometimes described as grapefruit in flavor. This variety was bred from a Fuggle seedling(itself derived from cross between Fuggle and the Russian hop Serebrianka) in the breeding program at the U.S. Department of Agriculture Hop Research Station in Corvallis, Oregon, and released as a U.S. aroma variety in 1972. The variety achieved great popularity in the late 1970s as the first U.S. aroma cultivar. Cascade is commonly used for dryhopping, but is sometimes also used for its essential oil.
