Oak More is a commercial preparation of granular white oak. It is used to impart an oak flavor and some tannin to wine without the difficulty or expense of working with a barrel. Due to its comosition, it is a finely ground material, about the consistency of sawdust, hence care must be exercised when using it because a large volume of oak surface area is exposed to wine during its use. It can be used any time in the winemaking process. Usual dose is 4 to 20 grams per gallon.
