An acid typically offered as a powder and which is the principle acid found in
grapes. Tartaric acid is nearly exclusive to grapes and is found in few instances elsewhere. Its use is principally to adjust acid levels in must and wine. Wine that has the proper amount of tartaric acid will taste better and last longer.
Wines that are between 0.6% and 0.9% titratable acidity are considered in the normal range and usually do not need any additional tartaric acid. Wine below 0.5% titratable acidity can benefit from its addition. Typical use to increase acidity in grape wine is approximately 3.5 to 3.8 grams per gallon. This amount will increase acidity by approximately 0.1%.
